The choices we make with food points to something much larger. It’s important to remember that every time we eat we not only make an economical statement but an environmental and political one as well. Here at The Grove we want to do more than just feed our guests a delicious meal, we hope to improve our community by asking ourselves what our responsibilities are, what relationships we want to build and what kind of impact we want to have.
It brings us great comfort to say that we’ve managed to find answers to these questions through our partnership with Lone Star Meats and Niman Ranch. Recently, one of our chefs had the pleasure of visiting A Frame Acres in Iowa, a pig farm that meets the Niman Ranch standards for quality and commitment to raising animals responsibly. Free from over crowding, these pigs have ample space to roam and express their natural instincts.
Properly raised animals with few stressors is not only humane it leads to a better tasting product. This is also a way of being respectful to what we cook while sending a very important message. Contained in every dish is a message of compassion to the animals, supporting farmers who are willing to put in the hard work to meet strict ethical guidelines and caring for our guests by delivering a meal that has good flavor with no added hormones or antibiotics.
Without good ingredients you can’t have good food that’s why we go after the best flavors, which in turn leads us to find great farming. There’s a deep interest in where our food comes from and making personal connections in the process. Through our food decisions we hope to redefine fine dining by maintaining a balance between sustainability and delicious meals.
