A Slice of Comfort

“Without a solid foundation you’ll have trouble creating anything of value”, while this can be applied to life in general it is most obvious when baking a pie. It starts with the perfect crust, one that is flaky and tender in the center with a nice crispy golden brown edge. A pâte brisée is a versatile and simple crust that just requires a few basic understanding of ingredients. Once you have that down you can use this recipe to create a multitude of different pastries from sweet to savory.

Become a pie crust expert by keeping two things in mind:

  • Make more than you need – You can always cut the excess off the pan and make extra treat by sprinkling with cinnamon and sugar. However it is much more difficult to reach the edge of the pan with too little and you run the risk of having crust that is too thin and prone to crack
  • Keep the dough cold –  Do this by using chilled butter and ice water, after you’re done mixing, return the dough to the fridge. This makes it easier to handle and keep it from tearing.

 

INGREDIENTS:

  • 2 1/2 cups of flour
  • 1/2 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 cup of cold butter
  • 1/4 – 1/2 cup of ice water

 

Mix together in the low setting of a mixer until you  get course crumbs then proceed to add ice water until dough becomes smooth. Remove dough from mixer and shape into a ball, using flour as need, wrap in plastic and refrigerate for at least an hour. Use this time to make the filling for your pie. Once chilled remove from plastic and begin rolling out the dough on a floured surface until 3 mm thick. Place in pan and add filling. Bake time will depend on your pie’s instructions.

If you just need the pie shell baked on it’s own first you must dock the pie. This simply means prickling the dough full of holes to allow steam to escape to prevent puffing. Next, place weights on dough. You can do this by lining it with aluminum foil and pour in dry beans. Bake at 400°F 20 minutes. Remove foil with beans. Bake another 10-15 minutes for a perfectly crispy, flaky crust.
